Spaghetti squash? Yeah I know what you’re thinking! But trust me its soooo good! I’ve been putting people on to this recipe who have been looking for a healthier and lower carb meal that resembles their favorite pasta!
So if this sounds like you (working on eating better and lowering those carbs...) this recipe is all yours!
What you will need:
1. Spaghetti Squash
2. Olive Oil
3. Your favorite spices (black pepper, sea salt/pink Himalayan salt, garlic)
4. Tomato sauce
5. Vegan cheese or cheese of your choice
Directions:
1. Preheat your oven to 375 degrees
2. Cut your spaghetti squash in half
3. Scoop out the seeds and ribbing
4. Coat your squash halves with olive oil along with your favorite spices
5. Place those halves in the oven to bake and soften for 30-45 mins
6. After baking for 30-45 min, let cool for 15-20 min
7. Using a fork...start to scrape the insides (if properly baked and softened the insides will separate easily)
8. Place your noodles into an olive oil coated pan, adding/layering with your favorite tomato sauce and cheese (vegan cheese)
9. Sprinkle black pepper and sea salt
10. Bake casserole (covered) for 20-30 min
11. Enjoy!
