Vegan Chickpea Soup Recipe


This recipe is everything! I love having a good warm soup on a cold muggy day! The best thing about this recipe is that it takes less than 20 minutes to prepare. Lets get started.


Here's what you'll need:


  • Canned or boxed chickpeas (unsalted)

  • Green onions

  • Black pepper

  • Garlic cloves

  • Sea salt

  • Grape seed oil


Preparation:


  1. Add grape seed oil, green onions (chopped) and crushed garlic cloves to low heat pot.

  2. Let the ingredients above cook for about 3-4 minutes before adding chickpeas with the aquafaba (aquafaba - it’s is the liquid leftover from canned/boxed chickpeas)

  3. Add black pepper, garlic powder and sea salt to your liking. Stir.

  4. Continue stirring and let your soup cook for about 15 minutes covered.

  5. Enjoy!
